Indian Spiced Onion Recipe with Cilantro & Mint Garlic Raita

Here's an Onion Ring Recipe you didn't expect to jazz up your memorial day holiday barbeque.

Onion Rings on Black Chalkboard Slate
Indian Spiced Onion Rings with Cilantro, Mint Garlic Raita

2 large Vidalia Onion or White Onion - cut into 1/2 inch rounds


1 cup cornstarch - place in shallow bowl


1-2 tsp kosher salt

1/2 tsp pepper

2 Tbs Curry Powder

1/2 - 1 tsp cayenne

1 tsp Garlic Powder

1 tsp Paprika

1 tsp Turmeric

1/2 tsp Mustard Powder


1 egg whisked with 2 Tbsp water

1 Cup Panko Bread Crumbs

1/2 cup of AP flour

(add more if necessary)


4 Cups Vegetable or Peanut oil

Paper grocery bag cut open laid out on baking sheet (to absorb excess oil) alternatively use paper towels


Method


Separate onion rings and dredge into corn starch. Shake off excess. Lay aside




Prepare your egg dredging station, seasoning station and pour oil into deep vat and bring up to 350 - 375 degrees


Whisk seasoning with panko and flour. Working from right to left, dunk starched rings into egg, then into seasoned panko flour mixture. Shake off excess. Working in batches and to oil.


Once rings have turned golden brown. Remove from oil and lay out on paper bag or paper towels. Season immediately with kosher salt, sea salt, or pink Himalayan salt.

Repeat with remaining onion rings.


Cilantro Mint Garlic Raita


2 cups plain low fat yogurt. If using Greek yogurt, you may need a little water to thin out.

1/2 bunch cilantro

2-3 garlic cloves

1/4 cup mint

1/2 jalapeno, seeded - (use all if you like it spicier)

Squeeze of Lime juice

Salt & Pepper to taste

1 tsp curry powder ( or to taste)

dash of cayenne


Place all ingredients in blender or food processor. Whiz till blended. Check for seasoning and lime juice. Serve with Spiced Onion Rings. Enjoy!
